1996, Carolina Cajun was formed shortly after the marriage of Jeff and Valerie, each with their own separate roots in New Orleans and Charlotte. Carolina Cajun started as a hobby when Jeff began catering large parties, where he would showcase its Low Country Boils, Red Beans and Rice and outstanding Gumbo to many business gatherings and large corporations.
